Preparation Pointers

Perogies

Boiling - Fresh or Frozen: For 12 - 18 perogies bring 4 litres of water to a boil. Add perogies. When the perogies float to the top, remove them from the water using a slotted spoon or plastic sieve. If cooking from frozen allow the perogies to sit in the water an extra minute. Do not boil perogies, do not overcook. Add oil, butter or margarine to lightly coat the perogy and serve.

• Pan-frying: Add 1 tsp. of oil and 1 tsp. of margarine or butter to a frying pan. Heat pan over medium heat to melt margarine and add perogies. Fry until golden brown, about 3-4 minutes.

• Deep-frying: Heat deep-fryer to 350 °F or 180 °C. Add perogies and fry until golden brown, about 2-3 minutes.

• Microwaving: Place perogies in microwavable dish. Add margarine or butter and cover. Heat 1-2 minutes on medium heat until warm (time may vary, depending on the power of your microwave). Do not overheat.

Perogy Bites - frozen

• Oven: Pre-heat oven to 400 °F , place perogy bites on cookie sheet and bake for about 10-20 minutes. Deep-frying: Heat deepfryer to 350 °F or 180 °C. Add perogies and fry about 2-3 minutes.

Cabbage Rolls
Note: smaller quantities take less time

Oven: Heat at 350F or 180 °C for approximately 1 hour until cabbage is tender. If cabbage rolls are frozen defrost cabbage rolls thoroughly and follow above instructions.

Microwaving: Heat for 10-15 minutes on medium high heat until hot.

Pyryshky

Oven: Pre-heat oven to 300 °F , place pyryshky on cookie sheet and bake for about 10 minutes.

• Microwave: Place pyryshky in microwavable dish. Heat about on medium heat
