Preparation Pointers
Perogies
• Boiling - Fresh or Frozen: For 12 - 18 perogies bring 4 litres of water
to a boil. Add perogies. When the perogies float to the top, remove them from
the water using a slotted spoon or plastic sieve. If cooking from frozen allow
the perogies to sit in the water an extra minute. Do not boil perogies, do not
overcook. Add oil, butter or margarine to lightly coat the perogy and serve.
• Pan-frying: Add 1 tsp. of oil and 1 tsp. of margarine or butter to a frying
pan. Heat pan over medium heat to melt margarine and add perogies. Fry until golden
brown, about 3-4 minutes.
• Deep-frying: Heat deep-fryer to 350 °F or 180 °C. Add perogies and
fry until golden brown, about 2-3 minutes.
• Microwaving: Place perogies in microwavable dish. Add margarine or butter
and cover. Heat 1-2 minutes on medium heat until warm (time may vary, depending
on the power of your microwave). Do not overheat.
